Pineapple Fried Rice

Pineapple Fried Rice_Vietnamese food_Indiechine-8 In the winter time our favorite part of going to the hotel gym where we work out is to use a very nice sauna there after swimming. About two weeks ago, as we walked out of the swimming pool, I asked my husband if he was going to the sauna. "I did. All day", he said. "I was soaking wet just being in our living room." The heat and humidity in May here is in fact quite brutal, at least it is for us. Locals don't seem to mind though. Yesterday I met up with a Hoi-An native friend and when my arm was about to fall off from fanning myself so hard with a paper fan, she told me that she was longing for summer to come. I almost cried. I hope you're not yet tired of me talking about the weather here. I'm not complaining - just trying to give some context. It's the weather and seasonal food that determines what I cook and eat. I don't cook as much lately as I normally do, and when I do, I try to make something simple, preferably a all-in-one dish that has protein, vegetable and carb. It's pineapple season here now so pineapple fried rice has been my favorite thing to cook recently. Oh, and the washing up time in the kitchen is minimized as we eat directly from fresh pineapple bowls. Cute and convenient! Honestly I don't think there's any standard fried rice recipe because fried rice to us is just like pizza to Westerners. It's highly customizable and you can throw in anything you love. I used eggs, beans, carrots this time but mushrooms, seafood and meat would be good too. Just make sure to leave the cooked rice in the fridge over night so it will dry out a bit and it won't be too sticky. Pineapple Fried Rice_Vietnamese food_Indiechine-6 It was quite challenging the first time I tried to scoop out the pineapple while maintaining the shell to make it a bowl, but then I discovered a knife trick that I show in the video below. If you don't want to spend time carving pineapple bowls, just buy some ready-cut pineapple pieces. Either way, this dish will be simple, quick and absolutely delicious!       I hope it’ll turn out good. I think this dish would be cute for parties too. Each guest would have their own pineapple bowl 😀
